Ingredients
  

  • 1 can (400 g / 15 oz) chickpeas drained and rinsed
  • 2 stalks celery finely chopped
  • ΒΌ small red onion finely chopped
  • 3 tbsp Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh dill, chopped
  • 8 slices whole grain bread

Instructions
 

  • Mash the chickpeas
    In a medium bowl, lightly mash the chickpeas with a fork or potato masher, leaving some texture.
  • Combine ingredients
    Add the chopped celery, red onion, Greek yogurt, Dijon mustard, and fresh dill.
    Mix until well combined.
  • Prepare the sandwiches
    If making ahead, store the chickpea salad filling in the fridge in an airtight container.
    In the morning or before serving, scoop the filling onto whole grain bread to assemble the sandwiches.

    Serve immediately for best texture.
