Instructions
Roast the sweet potatoesPreheat oven to 200°C (400°F).Toss diced sweet potatoes with a drizzle of olive oil (optional), salt, and pepper.Roast for 20–25 minutes until tender and slightly crispy.
Prepare the quinoa and kaleCook quinoa if not already done.Rinse and chop the kale. Massage it briefly with a pinch of salt to soften.
Assemble the bowlIn each bowl, add half of the quinoa, sweet potatoes, black beans, and kale.
