🥗 Sweet Potato & Quinoa Bowl

Ingredients
  

  • 1 medium sweet potato peeled and diced
  • 1 cup cooked quinoa
  • ½ cup black beans cooked or canned, rinsed and drained
  • 1 cup kale chopped and lightly massaged
  • 1 avocado add fresh before serving
  • 2 tbsp tbsp lime-tahini dressing

Instructions
 

  • Roast the sweet potatoes
    Preheat oven to 200°C (400°F).
    Toss diced sweet potatoes with a drizzle of olive oil (optional), salt, and pepper.
    Roast for 20–25 minutes until tender and slightly crispy.
  • Prepare the quinoa and kale
    Cook quinoa if not already done.
    Rinse and chop the kale. Massage it briefly with a pinch of salt to soften.
  • Assemble the bowl
    In each bowl, add half of the quinoa, sweet potatoes, black beans, and kale.
  • Top and serve
    Just before serving, top with sliced avocado and drizzle with lime-tahini dressing.
    📝 Prep tip: Add avocado the day you plan to eat to prevent browning.
