Roast the vegetablesPreheat oven to 200°C (400°F).Roast chopped vegetables with a touch of olive oil, salt, and pepper for 20–25 minutes.
Prepare the riceCook brown rice in advance or use leftovers.📝 Prep tip: Cook a large batch of brown rice to use in multiple recipes throughout the week.
Assemble the bowlsIn each bowl, add 1/2 cup brown rice, 1/2 cup roasted vegetables, and a portion of curry chicken.
Top with sauceDrizzle with Greek yogurt sauce just before serving.
