🥗 Chickpea & Quinoa Bowl with Roasted Red Pepper Sauce

A homemade version of the popular restaurant dish at a fraction of the cost.

Ingredients
  

  • 1 cup cooked quinoa
  • 1 chicken breast grilled or sautĂ©ed, sliced
  • ½ cup black beans drained and rinsed
  • ½ cup corn fresh, frozen or canned
  • ½ cup sliced bell peppers any color
  • 2 tablespoons chipotle sauce such as parsley, mint, or dill
  • 1 lime cut into wedges

Instructions
 

  • Cook the quinoa
    Prepare quinoa according to package instructions and set aside.
  • Cook the chicken
    Season chicken breast with your favorite spices.
    Grill or sauté until fully cooked, then slice.
  • Prepare toppings
    Slice bell peppers, and prepare black beans and corn.
  • Assemble the bowls
    Divide quinoa between bowls.
    Top each with chicken, black beans, corn, and bell peppers.
  • Add sauce and lime
    Drizzle with chipotle sauce and serve with a lime wedge.
