Ingredients
  

  • 1 cup cooked brown rice
  • 1 cup shelled edamame (cooked)
  • ½ cup shredded carrots
  • ½ cup diced bell peppers any color
  • ½ cup steamed broccoli florets
  • ¼ cup citrus-ginger dressing

Instructions
 

  • Prep the vegetables
    Lightly steam or sauté the broccoli, carrots, and bell peppers. Slightly undercook to maintain texture.
  • Assemble the bowls
    Divide brown rice between two bowls.
    Top with edamame, vegetables, and drizzle with citrus-ginger dressing.
  • Serve immediately or pack for later.
    📝 Prep tip: Slightly undercook the vegetables so they don't get mushy when reheated.
