🥗 Vegetarian Sushi Grain Bowl

All the flavors of sushi in an easy-to-prep bowl format.

Ingredients
  

  • 1 cup cooked brown rice
  • ½ avocado sliced
  • ½ cucumber julienned
  • ½ cup shredded carrots
  • ½ cup cooked edamame
  • 1-2 nori sheets cut or crumbled
  • 2 tablespoons soy sauce for drizzling or dipping

Instructions
 

  • Cook the rice
    Prepare brown rice according to package instructions and let it cool slightly
  • Prep vegetables and toppings
    Slice avocado, julienne cucumber, and shred carrots if needed.
  • Assemble the bowls
    Divide rice between bowls.
    Top with edamame, cucumber, carrots, and avocado.
  • Add soy sauce
    Drizzle soy sauce over the bowl or serve on the side.
  • Add nori just before eating
    Pack nori sheets separately and crumble them over the bowl when ready to eat.
