cup cooked farro

cup roasted sweet potatoes
cubed

cup chickpeas
drained and rinsed

cup chopped kale

avocado
sliced

tablespoons tahini dressing
Instructions
Roast the sweet potatoes
Cut into cubes, toss with olive oil, and roast at 200°C (400°F) for 20–25 minutes until tender.
Prepare the farro
Cook farro according to package instructions and let cool slightly.
Massage the kale
Add olive oil and gently massage the kale for 1–2 minutes until it softens.
Assemble the bowl
Divide the farro between two bowls.
Top with roasted sweet potatoes, chickpeas, kale, and sliced avocado.
Add dressing
Drizzle with tahini dressing just before serving.
