🥗 Vegan Grain Bowl with Tahini Dressing

Ingredients
  

  • 1 cup cooked farro
  • 1 cup roasted sweet potatoes cubed
  • ½ cup chickpeas drained and rinsed
  • 1 cup chopped kale
  • ½ avocado sliced
  • 2-3 tablespoons tahini dressing

Instructions
 

  • Roast the sweet potatoes
    Cut into cubes, toss with olive oil, and roast at 200°C (400°F) for 20–25 minutes until tender.
  • Prepare the farro
    Cook farro according to package instructions and let cool slightly.
  • Massage the kale
    Add olive oil and gently massage the kale for 1–2 minutes until it softens.
  • Assemble the bowl
    Divide the farro between two bowls.
    Top with roasted sweet potatoes, chickpeas, kale, and sliced avocado.
  • Add dressing
    Drizzle with tahini dressing just before serving.
    📝 Prep tip: Massage kale with a bit of olive oil to soften it before adding to your bowl.
