🌯 Healthy Lunch Wraps

Versatile wraps that can be customized with whatever vegetables you have on hand.

Ingredients
  

  • 2 whole wheat tortillas
  • 4 tablespoons hummus
  • 1 cup mixed greens
  • ½ bell pepper thinly sliced
  • ¼ cucumber thinly sliced
  • ½ carrot shredded
  • ½ avocado sliced

Instructions
 

  • Prepare vegetables
    Wash and slice all vegetables.
  • Assemble the wraps
    Lay out each tortilla and spread 2 tablespoons of hummus across the center.
    Add a layer of mixed greens, then top with sliced bell peppers, cucumber, shredded carrot, and avocado.
  • Wrap tightly
    Roll the tortilla snugly into a wrap and slice in half if desired.
    📝 Prep tip: Prep all fillings in advance, but assemble wraps the morning of to prevent sogginess.
