- Β½ cup cooked corn kernels
- Β½ cup diced bell peppers any color
- ΒΌ cup finely chopped red onion
- 3 tablespoons cilantro-lime dressing
- 1 ripe avocado sliced
Cook the black bean pasta according to the package instructions. Drain and let cool.
In a bowl, mix the cooled pasta with corn, bell peppers, and red onion.
Drizzle with cilantro-lime dressing and toss to coat.
Divide into bowls and top with sliced avocado.
