🥪 Black Bean-Avocado Torta
A Mexican-inspired sandwich that's packed with fiber and healthy fats.

- 2 whole grain rolls
- 1 cup canned black beans drained and rinsed
- 1 ripe avocado
- 1 cabbage slaw pre-shredded or homemade
- 1 tablespoon fresh lime juice
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
Prepare the black bean spreadIn a bowl, mash the black beans with a fork until mostly smooth.Season with salt, pepper, and a squeeze of lime juice. Prepare the avocadoPeel and slice the avocado, or mash with a bit of lime juice if preferred.
