Instructions
Blanch kale leavesBring water to a boil in a large pan. Blanch the kale leaves for 15–20 seconds to soften them, then transfer to a bowl of cold water. Pat dry gently with paper towels.
Prepare fillingIn a bowl, mix shredded chicken with Greek yogurt. Add salt, pepper, and a little lemon juice if desired.
Add crunch and sweetnessGently fold in sliced apples, chopped walnuts, and dried cranberries.
Assemble wrapsLay each kale leaf flat. Spoon the mixture into the center, then roll or fold like a burrito or wrap.
Serve immediatelyBest served fresh. If packing for later, wrap tightly in parchment or foil.
