🥬 Chicken & Apple Kale Wraps

A low-carb wrap option using kale leaves instead of tortillas.

Ingredients
  

  • 2 large kale leaves preferably lacinato or curly kale
  • 1 about 150g small cooked chicken breast , shredded or sliced
  • ½ apple (preferably crisp like Fuji or Granny Smith), thinly sliced
  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons chopped walnuts
  • 1 tablespoon dried cranberries
  • Salt and pepper to taste
  • Optional: squeeze of lemon juice

Instructions
 

  • Blanch kale leaves
    Bring water to a boil in a large pan. Blanch the kale leaves for 15–20 seconds to soften them, then transfer to a bowl of cold water. Pat dry gently with paper towels.
  • Prepare filling
    In a bowl, mix shredded chicken with Greek yogurt. Add salt, pepper, and a little lemon juice if desired.
  • Add crunch and sweetness
    Gently fold in sliced apples, chopped walnuts, and dried cranberries.
  • Assemble wraps
    Lay each kale leaf flat. Spoon the mixture into the center, then roll or fold like a burrito or wrap.
  • Serve immediately
    Best served fresh. If packing for later, wrap tightly in parchment or foil.

    Blanch kale leaves briefly to make them more pliable for wrapping.
