🥣 Cauliflower Soup with Smoked Gouda

Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 medium potato, peeled and diced
  • 1 medium head of cauliflower (about 600g), cut into florets
  • 4 cups vegetable broth
  • 100g smoked Gouda cheese, shredded
  • Salt and pepper to taste
  • Optional topping: 1 cup whole grain croutons

Instructions
 

  • SautĂ© aromatics
    In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté for 3–4 minutes until translucent and fragrant.
  • Add vegetables and broth
    Add the diced potato and cauliflower florets. Pour in the vegetable broth and stir. Bring to a boil.
  • Simmer
    Reduce heat to low. Cover and simmer for 20–25 minutes, or until the cauliflower and potato are tender.
  • Blend the soup
    Use an immersion blender to purée the soup until smooth. You can also transfer it to a blender in batches.
  • Add cheese and season
    Stir in the shredded smoked Gouda until melted and creamy. Season with salt and pepper to taste.
  • Serve
    Ladle into bowls and top with whole grain croutons if desired.

    Make homemade croutons with stale bread to reduce food waste.
