🥣 Cauliflower Soup with Smoked Gouda

- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 medium potato, peeled and diced
- 1 medium head of cauliflower (about 600g), cut into florets
- 4 cups vegetable broth
- 100g smoked Gouda cheese, shredded
- Salt and pepper to taste
- Optional topping: 1 cup whole grain croutons

Add vegetables and brothAdd the diced potato and cauliflower florets. Pour in the vegetable broth and stir. Bring to a boil. SimmerReduce heat to low. Cover and simmer for 20–25 minutes, or until the cauliflower and potato are tender. Blend the soupUse an immersion blender to purée the soup until smooth.
