French Toast Casserole with Caramelized Apples

This make-ahead French toast casserole is perfect for weekend brunches. Stale bread works better than fresh in this recipe, as it soaks up the custard without becoming too soggy.

Ingredients
  

  • 8 cups stale bread, cut into 1-inch cubes
  • 6 arge eggs
  • 2 cups milk
  • ½ 1/2 cup heavy cream
  • cup maple syrup, plus more for serving
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • For the caramelized apples:
  • 3 large apples, peeled and sliced
  • 4 tablespoons butter
  • cup brown sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Grease a 9×13-inch baking dish and arrange bread cubes evenly.
  • In a large bowl, whisk together eggs, milk, cream, maple syrup, vanilla, cinnamon, nutmeg, and salt.
  • Pour the egg mixture over the bread, making sure all pieces are coated.
  • Cover and refrigerate for at least 2 hours or overnight.
  • When ready to bake, preheat oven to 350°F (175°C).
  • For the caramelized apples: Melt butter in a skillet over medium heat.
  • Add apple slices, brown sugar, and cinnamon. Cook for 8-10 minutes until apples are tender and caramelized.
  • Spread the apple mixture over the soaked bread.
  • Bake for 45-50 minutes until puffed and golden.
