Ingredients

cooked green or brown lentils
½
rolled oats
¼
finely chopped onion
2
cloves garlic, minced
¼
finely chopped bell pepper
2
tablespoons ground flaxseed + 6 tablespoons water
1
tablespoon nutritional yeast
1
teaspoon dried thyme
½
teaspoon smoked paprika
Salt and pepper to taste

tablespoons olive oil for cooking
Instructions
Mix ground flaxseed with water and set aside for 5 minutes to create a flax “egg”.
In a food processor, pulse lentils and oats until combined but still slightly chunky.
Transfer to a bowl and add onion, garlic, bell pepper, flax egg, nutritional yeast, and spices.
Mix well and form into 6-8 patties.
Heat olive oil in a skillet over medium heat and cook patties for 4-5 minutes on each side until golden brown.
Serve with avocado slices and fresh greens.
