Protein-Boosted Chia Pudding

Creamy chia pudding enriched with plant-based protein powder, layered with fruit and nut butter for a grab-and-go breakfast.

- ¼ cup chia seeds
- 1 cup plant-based milk (soy milk offers the most protein)
- 1 scoop (approximately 20g) plant-based protein powder
- 1 tablespoon maple syrup or agave nectar
- ½ teaspoon vanilla extract
- ¼ teaspoon cinnamon
- 1 tablespoon almond butter
- ½ cup mixed berries
- 1 tablespoon hemp seeds
In a bowl or jar, whisk together plant-based milk, protein powder, maple syrup, vanilla extract, and cinnamon until smooth.
Add chia seeds and stir well to combine.
Let sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate overnight or for at least 4 hours.
Before serving, top with almond butter, mixed berries, and hemp seeds.
