Ingredients
  

  • 1 medium sweet potato, diced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup cooked black beans
  • 2 cups kale or spinach, chopped
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon turmeric
  • Salt and pepper to taste
  • 1 avocado, sliced (for serving)
  • Hot sauce (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Heat olive oil in a large skillet over medium heat.
  • Add onion and bell pepper, cook for another 5 minutes until vegetables are tender.
  • Stir in garlic, black beans, and spices. Cook for 2 minutes.
  • Add chopped greens and cook until wilted, about 2-3 minutes.
  • Season with salt and pepper to taste.
  • Serve topped with sliced avocado and hot sauce if desired.
