- 1 medium sweet potato, diced
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup cooked black beans
- 2 cups kale or spinach, chopped
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ¼ teaspoon turmeric
- Salt and pepper to taste
- 1 avocado, sliced (for serving)
- Hot sauce (optional)
Heat olive oil in a large skillet over medium heat.
Heat olive oil in a large skillet over medium heat.
Add onion and bell pepper, cook for another 5 minutes until vegetables are tender.
Stir in garlic, black beans, and spices. Cook for 2 minutes.
Add chopped greens and cook until wilted, about 2-3 minutes.
Season with salt and pepper to taste.
Serve topped with sliced avocado and hot sauce if desired.
