East Village Tofu Scramble

Ingredients
  

  • 7 oz extra-firm tofu, drained and crumbled
  • ½ red bell pepper, diced
  • 1 cup baby spinach
  • ¼ cup cherry tomatoes, halved
  • ¼ avocado, diced
  • 1 tablespoon nutritional yeast
  • ½ teaspoon turmeric
  • ¼ teaspoon garlic powder
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add bell pepper and cook for 2 minutes until slightly softened.
  • Add crumbled tofu, turmeric, garlic powder, salt, and pepper.
  • Cook for 3-4 minutes, stirring occasionally.
  • Add spinach and cherry tomatoes, cook until spinach wilts (about 1 minute).
  • Remove from heat, sprinkle with nutritional yeast, and top with diced avocado.
