East Village Tofu Scramble

A colorful, plant-based scramble featuring tofu, veggies, and nutritional yeast—packed with protein and vitamins.

- 7 oz extra-firm tofu, drained and crumbled
- ½ red bell pepper, diced
- 1 cup baby spinach
- ¼ cup cherry tomatoes, halved
- ¼ avocado, diced
- 1 tablespoon nutritional yeast
- ½ teaspoon turmeric
- ¼ teaspoon garlic powder
- 1 teaspoon olive oil
- Salt and pepper to taste
Heat olive oil in a non-stick skillet over medium heat.
Add bell pepper and cook for 2 minutes until slightly softened.
Add crumbled tofu, turmeric, garlic powder, salt, and pepper.
Cook for 3-4 minutes, stirring occasionally.
Add spinach and cherry tomatoes, cook until spinach wilts (about 1 minute).
Remove from heat, sprinkle with nutritional yeast, and top with diced avocado.
