No-cook chia pudding with coconut milk, almond butter, and berries—a refreshing, nutrient-dense option for hectic mornings.

- 3 tablespoons chia seeds
- 1 cup unsweetened coconut milk
- ½ teaspoon vanilla extract
- 1 tablespoon almond butter
- ½ cup mixed berries
- 1 tablespoon pumpkin seeds
- 1 teaspoon honey or maple syrup (Optional)
In a jar or container with a lid, combine chia seeds, coconut milk, vanilla extract, and almond butter.
Stir well to combine, making sure there are no clumps of chia seeds.
Seal and refrigerate for at least 4 hours or overnight.
When ready to eat, top with mixed berries and pumpkin seeds.
Drizzle with honey or maple syrup if desired.
