Ingredients
  

  • ½ cup rolled oats
  • 1 cup vegetable broth (low sodium)
  • 1 egg
  • ½ cup baby spinach
  • 6 cherry tomatoes, halved
  • 1 tablespoon nutritional yeast
  • 1 teaspoon olive oil
  • 1 tablespoon pumpkin seeds
  • Salt and pepper to taste
  • Optional: dash of hot sauce

Instructions
 

  • In a small pot, bring vegetable broth to a boil.
  • Add oats, reduce heat to medium-low, and simmer for 5 minutes, stirring occasionally.
  • Meanwhile, in a small non-stick pan, heat olive oil and fry the egg to your preference.
  • When oats are almost done, stir in spinach until wilted.
  • Transfer oats to a bowl, top with fried egg, cherry tomatoes, nutritional yeast, and pumpkin seeds.
  • Season with salt, pepper, and optional hot sauce.
