A savory twist on classic oatmeal with egg, spinach, and tomatoes—quick, filling, and inspired by trendy NYC breakfast spots.

- ½ cup rolled oats
- 1 cup vegetable broth (low sodium)
- 1 egg
- ½ cup baby spinach
- 6 cherry tomatoes, halved
- 1 tablespoon nutritional yeast
- 1 teaspoon olive oil
- 1 tablespoon pumpkin seeds
- Salt and pepper to taste
- Optional: dash of hot sauce
In a small pot, bring vegetable broth to a boil.
Add oats, reduce heat to medium-low, and simmer for 5 minutes, stirring occasionally.
Meanwhile, in a small non-stick pan, heat olive oil and fry the egg to your preference.
When oats are almost done, stir in spinach until wilted.
Transfer oats to a bowl, top with fried egg, cherry tomatoes, nutritional yeast, and pumpkin seeds.
Season with salt, pepper, and optional hot sauce.
