Decadent breakfast sandwich using French toast as bread, filled with eggs, Swiss cheese, and finished with maple syrup.

Ingredients
  

  • slices brioche bread
  • large eggs (for French toast)
  • large eggs (for filling)
  • cup milk
  • teaspoon vanilla extract
  • teaspoon ground cinnamon
  • slices Swiss cheese
  • tablespoons butter, divided
  • Maple syrup for drizzling
  • Powdered sugar for dusting (optional)

Instructions
 

  • In a shallow bowl, whisk together 2 eggs, milk, vanilla, and cinnamon.
  • Dip brioche slices in the mixture, allowing them to soak for about 30 seconds per side.
  • Heat 1 tablespoon butter in a large nonstick pan over medium heat.
  • Cook the soaked bread until golden brown, about 2-3 minutes per side. Set aside and keep warm.
  • In the same pan, melt the remaining butter.
  • Crack 2 eggs into the pan and cook to your preferred doneness.
  • Place cheese on the eggs during the last minute of cooking.
  • Assemble the sandwich by placing the eggs and cheese between two slices of French toast.
  • Drizzle with maple syrup and dust with powdered sugar if desired.

Notes

Use cinnamon raisin bread for an even sweeter twist.
