Decadent breakfast sandwich using French toast as bread, filled with eggs, Swiss cheese, and finished with maple syrup.

- slices brioche bread
- large eggs (for French toast)
- large eggs (for filling)
- cup milk
- teaspoon vanilla extract
- teaspoon ground cinnamon
- slices Swiss cheese
- tablespoons butter, divided
- Maple syrup for drizzling
- Powdered sugar for dusting (optional)
In a shallow bowl, whisk together 2 eggs, milk, vanilla, and cinnamon.
Dip brioche slices in the mixture, allowing them to soak for about 30 seconds per side.
Heat 1 tablespoon butter in a large nonstick pan over medium heat.
Cook the soaked bread until golden brown, about 2-3 minutes per side. Set aside and keep warm.
In the same pan, melt the remaining butter.
Crack 2 eggs into the pan and cook to your preferred doneness.
Place cheese on the eggs during the last minute of cooking.
Assemble the sandwich by placing the eggs and cheese between two slices of French toast.
Drizzle with maple syrup and dust with powdered sugar if desired.
Use cinnamon raisin bread for an even sweeter twist.
