Sweet Potato Pancakes

Ingredients
  

  • 1 cup mashed sweet potato (about 1 medium, cooked sweet potato)
  • 2 eggs
  • ¼ cup milk (dairy or plant-based)
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons oil for cooking
  • Maple syrup for serving

Instructions
 

  • In a large bowl, whisk together mashed sweet potato, eggs, milk, maple syrup, and vanilla.
  • In another bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
  • Add dry ingredients to wet ingredients and stir until just combined.
  • Heat oil in a non-stick pan or griddle over medium heat.
  • Pour ¼ cup batter for each pancake and cook until bubbles form on top.
  • Flip and cook until golden on both sides.
  • Serve warm with maple syrup.
