Ingredients

cup mashed sweet potato (about 1 medium, cooked sweet potato)

eggs
¼
cup milk (dairy or plant-based)

tablespoon maple syrup
1
teaspoon vanilla extract
1
cup whole wheat flour
2
teaspoons baking powder
1
teaspoon cinnamon
¼
teaspoon nutmeg
¼
teaspoon salt

tablespoons oil for cooking
Maple syrup for serving
Instructions
In a large bowl, whisk together mashed sweet potato, eggs, milk, maple syrup, and vanilla.
In another bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
Add dry ingredients to wet ingredients and stir until just combined.
Heat oil in a non-stick pan or griddle over medium heat.
Pour ¼ cup batter for each pancake and cook until bubbles form on top.
Flip and cook until golden on both sides.
Serve warm with maple syrup.
