Ingredients
  

  • 2 whole wheat tortillas (8-inch)
  • 2 eggs, scrambled
  • ¼ cup mozzarella cheese
  • 2  tablespoons chopped bell peppers
  • 2 tablespoons chopped spinach
  • 1 tablespoon olive oil
  • Mild salsa (Whole Foods’ brand, optional)

Instructions
 

  • Heat oil in a skillet; add tortilla, sprinkle half with cheese.
  • Top with eggs, peppers, spinach; fold and cook 2 minutes per side.
  • Slice into triangles; serve with salsa.
