Blueberry Breakfast Cookies

Ingredients
  

  • 2 ripe bananas, mashed
  • 1 egg
  • ¼ cup applesauce
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 ½ cups rolled oats
  • cup whole wheat flour
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup fresh or frozen blueberries
  • 2 tablespoons sunflower seeds

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix mashed bananas, egg, applesauce, honey, and vanilla.
  • In another bowl, combine oats, flour, cinnamon, baking powder, and salt.
  • Add dry ingredients to wet ingredients and stir until combined.
  • Gently fold in blueberries and sunflower seeds.
  • Drop 2-tablespoon portions onto the prepared baking sheet and flatten slightly.
  • Bake for 15-18 minutes until edges are golden.
  • Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
