French Toast Roll-Ups

Ingredients
  

  • 12 slices of soft whole wheat bread, crusts removed
  • 4 oz cream cheese, softened (or dairy-free alternative)
  • 3 tablespoons strawberry jam
  • 1 cup finely diced strawberries
  • 2 eggs
  • ¼ cup milk (dairy or plant-based)
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter for cooking
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • Maple syrup for dipping

Instructions
 

  • Flatten each slice of bread with a rolling pin.
  • In a small bowl, mix cream cheese and jam until smooth.
  • Spread about 1 tablespoon of the cream cheese mixture on each bread slice.
  • Add a few pieces of diced strawberries on top.
  • Roll up each slice tightly and press to seal.
  • In a shallow dish, whisk together eggs, milk, and vanilla.
  • In another dish, mix sugar and cinnamon.
  • Melt butter in a non-stick pan over medium heat.
  • Dip each roll-up in the egg mixture, then place in the pan.
  • Cook, turning occasionally, until golden brown on all sides (about 2 minutes).
  • Roll hot French toast in the cinnamon-sugar mixture.
  • Serve warm with maple syrup for dipping.
