Ingredients
  

  • 4 whole wheat English muffins, split
  • 4 tablespoons tomato sauce
  • 4 eggs, scrambled
  • ½ cup shredded mozzarella cheese
  • ¼ cup finely chopped bell peppers
  • ¼ cup finely chopped spinach
  • ¼ cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • Olive oil spray

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Place English muffin halves on a baking sheet, cut side up.
  • Spread about ½ tablespoon of tomato sauce on each muffin half.
  • Divide scrambled eggs evenly among the muffins.
  • Sprinkle with cheese and vegetables.
  • Sprinkle with Italian seasoning and lightly spray with olive oil.
  • Bake for 8-10 minutes until cheese is melted and edges are crispy.
  • Let cool slightly before serving.
