Ingredients
  

  • 2 thick slices artisanal sourdough bread
  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • ¼ teaspoon red pepper flakes
  • ¼ cup quick-pickled radishes (sliced radishes marinated in rice vinegar for 30 minutes)
  • 2 tablespoons mixed seeds (sunflower, pumpkin, hemp)
  • 1 handful microgreens
  • 1 tablespoon extra virgin olive oil
  • Flaky sea salt and freshly ground black pepper

Instructions
 

  • Toast sourdough bread until golden and crisp.
  • In a bowl, mash avocado with lemon juice, red pepper flakes, and a pinch of salt.
  • Spread avocado mixture evenly on toast.
  • Top with pickled radishes and sprinkle with mixed seeds.
  • Garnish with microgreens, a drizzle of olive oil, flaky salt, and fresh pepper.

Notes

  • Quick-pickle radishes for extra zing.
  • Use any microgreens you like.
  • Sourdough is easier to digest due to fermentation.
