- 1 cup mashed sweet potato (about 1 medium sweet potato, roasted)
- 1 1/2 cups oat milk
- ¼ cup maple syrup, plus more for serving
- ¼ cup melted coconut oil
- 1 teaspoon vanilla extract
- 2 cups whole wheat pastry flour
- 2 tablespoons ground flaxseed
- 1 tablespoon baking powder
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon salt
- ½ cup chopped pecans, toasted

Preheat waffle iron according to manufacturer’s instructions.
In a large bowl, whisk together mashed sweet potato, oat milk, maple syrup, coconut oil, and vanilla.
In a separate bowl, combine flour, flaxseed, baking powder, cinnamon, nutmeg, and salt.
Add dry ingredients to wet ingredients and stir until just combined.
Spray waffle iron with cooking spray and pour batter according to your waffle maker’s instructions.
Cook until golden brown and crisp.
Serve topped with vegan butter, maple syrup, and toasted pecans.
