Ingredients
  

  • 2 large eggs
  • 1 kaiser roll, split
  • 2 slices yellow American cheese
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Ketchup (optional)
  • Hot sauce (optional)

Instructions
 

  • Toast the kaiser roll: Heat a non-stick skillet over medium heat. Add a small amount of butter and place both halves of the roll cut-side down. Toast until golden brown, about 2-3 minutes. Remove and set aside.
  • Prepare the eggs: Crack two eggs into a bowl and beat lightly with a fork. Add a teaspoon of water (the NYC bodega secret!) and a pinch of salt and pepper.
  • Cook the eggs: In the same skillet, add the remaining butter over medium-low heat. When melted, pour in the egg mixture. Let it spread thinly across the pan.
  • Add cheese: When the eggs begin to set but are still slightly wet on top (about 1-2 minutes), place the cheese slices on one half of the egg
  • Fold and finish: Using a thin spatula, fold the egg over onto itself to cover the cheese. Cook for another 30 seconds until the cheese begins to melt.
  • Assemble: Place the egg and cheese onto the bottom half of the toasted roll. Add ketchup or hot sauce if desired, then top with the other half of the roll.
  • Wrap (optional): For the authentic NYC experience, wrap the sandwich tightly in parchment paper and let it steam for a minute before eating.

Notes

  • Adding a teaspoon of water to the eggs makes them fluffier—just like in NYC bodegas.
  • Use a fresh kaiser roll for the best result, but a hamburger bun works in a pinch.
  • The sandwich tastes even better when wrapped and left to “rest” for a minute, allowing the flavors to meld and the cheese to melt perfectly.
