- 2 large eggs
- 1 kaiser roll, split
- 2 slices yellow American cheese
- 1 tablespoon butter
- Salt and pepper to taste
- Ketchup (optional)
- Hot sauce (optional)
Toast the kaiser roll: Heat a non-stick skillet over medium heat. Add a small amount of butter and place both halves of the roll cut-side down. Toast until golden brown, about 2-3 minutes. Remove and set aside.
Prepare the eggs: Crack two eggs into a bowl and beat lightly with a fork. Add a teaspoon of water (the NYC bodega secret!) and a pinch of salt and pepper.
Cook the eggs: In the same skillet, add the remaining butter over medium-low heat. When melted, pour in the egg mixture. Let it spread thinly across the pan.
Add cheese: When the eggs begin to set but are still slightly wet on top (about 1-2 minutes), place the cheese slices on one half of the egg
Fold and finish: Using a thin spatula, fold the egg over onto itself to cover the cheese. Cook for another 30 seconds until the cheese begins to melt.
Assemble: Place the egg and cheese onto the bottom half of the toasted roll. Add ketchup or hot sauce if desired, then top with the other half of the roll.
Wrap (optional): For the authentic NYC experience, wrap the sandwich tightly in parchment paper and let it steam for a minute before eating.
- Adding a teaspoon of water to the eggs makes them fluffier—just like in NYC bodegas.
- Use a fresh kaiser roll for the best result, but a hamburger bun works in a pinch.
- The sandwich tastes even better when wrapped and left to “rest” for a minute, allowing the flavors to meld and the cheese to melt perfectly.
- Customize with ketchup, hot sauce, or any toppings you like.
