Ingredients
  

  • whole grain roll (or whole wheat English muffin)
  • large eggs
  • A handful of fresh spinach or kale, chopped
  • 1–2 slices reduced-fat cheese (or a small amount of full-fat cheese)
  • ¼ avocado, sliced
  • 2–3 slices fresh tomato
  • Butter or oil for cooking
  • Salt and pepper, to taste

Instructions
 

  • In a small bowl, beat the eggs with salt and pepper. Add chopped spinach or kale.
  • Heat butter or oil in a non-stick pan over medium heat. Scramble the eggs and greens until just cooked.
  • Split and lightly toast the whole grain roll.
  • Layer the scrambled eggs and greens on the bottom half of the roll.
  • Top with cheese, avocado slices, and tomato.
  • Close the sandwich and serve immediately.

Notes

You can prep the vegetables in advance for quicker assembly in the morning. Swap in other veggies like bell peppers or mushrooms for variety, and adjust the cheese amount to your family’s taste. This recipe is easily doubled or tripled for family breakfasts.
