Ingredients
  

  • 2 large eggs
  • 1-2 scallions, finely chopped
  • 1 teaspoon sesame oil
  • 1 sesame seed roll
  • 1-2 slices of cheese (your choice, or try mild white cheese)
  • 1 tablespoon sriracha mayo
  • 1 teaspoon furikake or toasted sesame seeds
  • 1 small sheet nori (seaweed), optional
  • Salt and pepper, to taste
  • Butter or oil for cooking

Instructions
 

  • In a bowl, whisk the eggs with chopped scallions, sesame oil, salt, and pepper.
  • Heat butter or oil in a nonstick pan over medium heat. Scramble the eggs until just set.
  • Split and lightly toast the sesame seed roll.
  • Spread a thin layer of sriracha mayo on the inside of the roll.
  • Layer scrambled eggs and cheese on the bottom half of the roll.
  • Sprinkle with furikake or toasted sesame seeds. Add nori if desired.
  • Close the sandwich and serve immediately.

Notes

For extra Asian flair, substitute the cheese with a mild, melty cheese like mozzarella or a slice of processed cheese as used in Korean street toast. Sriracha mayo can be homemade by mixing sriracha and mayonnaise to taste. This sandwich is best eaten fresh, but the egg mixture can be prepared ahead for busy mornings.
