A quick (15 minutes), budget-friendly, anti-waste spaghetti sauce recipe that can be customized depending on your available leftovers.

Ingredients
  

  • 2 tbsp olive oil
  • 1 mall onion, chopped
  • 2 garlic cloves, minced
  • 1 can crushed tomatoes (or fresh tomatoes)
  • Salt, pepper
  • Dried herbs (basil, oregano, thyme)
  • Cooked leftovers of your choice: roasted/grilled vegetables (bell peppers, zucchini, eggplant...), cooked meats (chicken, beef, sausage...), mushrooms, etc.
  • (Optional): sugar, red pepper flakes, olives, mashed potatoes

Instructions
 

  • Heat the olive oil in a large saucepan. Add the onion and sauté until translucent.
  • Add the garlic and cook for 1 more minute.
  • Stir in the tomatoes, add salt and pepper. Mix well.
  • Add chopped leftovers. Stir to combine.
  • Season with herbs and adjust to taste (add sugar or pepper flakes if you like).
  • Let simmer for 5–10 minutes, then serve with pasta.
