Ingredients

tbsp olive oil
1
mall onion, chopped
2
garlic cloves, minced
1
can crushed tomatoes (or fresh tomatoes)
Salt, pepper
Dried herbs (basil, oregano, thyme)
Cooked leftovers of your choice: roasted/grilled vegetables (bell peppers, zucchini, eggplant...), cooked meats (chicken, beef, sausage...), mushrooms, etc.
(Optional): sugar, red pepper flakes, olives, mashed potatoes
Instructions
Heat the olive oil in a large saucepan. Add the onion and sauté until translucent.
Add the garlic and cook for 1 more minute.
Stir in the tomatoes, add salt and pepper. Mix well.
Add chopped leftovers. Stir to combine.
Season with herbs and adjust to taste (add sugar or pepper flakes if you like).
Let simmer for 5–10 minutes, then serve with pasta.
