Ingredients
  

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 4 sandwich rolls or burger buns
  • 1 cup shredded lettuce
  • 1 tomato, sliced
  • ½ red onion, thinly sliced
  • ¼ cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh dill or cilantro, chopped

Instructions
 

  • Pound chicken to even thickness (about ½ inch). In a bowl, mix olive oil with all the dried spices.
  • Coat chicken with spice mixture and let sit for 5 minutes while you prep other ingredients.
  • Heat a large skillet over medium-high heat. Cook chicken for 4-5 minutes per side until internal temperature reaches 165°F.
  • Meanwhile, mix Greek yogurt with lemon juice and herbs to make the sauce.
  • Toast buns lightly if desired.
  • Assemble sandwiches: spread sauce on buns, add chicken, and top with lettuce, tomato, and red onion.

Notes

  • You can use either chicken breasts or thighs for this recipe.
  • Substitute Greek yogurt sauce with your favorite sauce for a different twist.
  • Toasting the buns adds extra texture and flavor.
