Ingredients
  

  • 1 lb boneless chicken breasts, cubed
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium red onion, chunked
  • 3 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat oven to 425°F. Line a large sheet pan with parchment paper.
  • In a large bowl, combine chicken and vegetables. Drizzle with olive oil and sprinkle with seasonings. Toss until evenly coated.
  • Spread mixture evenly on prepared sheet pan.
  • Bake for 20-25 minutes, stirring halfway through, until chicken is cooked through and vegetables are tender.
  • Serve immediately with rice or crusty bread.

Notes

You can substitute other vegetables such as zucchini, carrots, or cauliflower. For extra flavor, add a squeeze of lemon juice before serving. Serve with rice or crusty bread for a complete meal.
