Ingredients
  

  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup uncooked white rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained
  • 1 cup corn kernels
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese

Instructions
 

  • In a large skillet, brown ground beef over medium-high heat. Drain excess fat.
  • Add onion and bell pepper. Cook until softened, about 3 minutes.
  • Stir in garlic and taco seasoning. Cook for 1 minute until fragrant.
  • Add rice, diced tomatoes, black beans, corn, and chicken broth. Stir to combine.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes until rice is tender.
  • Sprinkle cheese on top. Cover and let stand until cheese melts, about 2 minutes.
  • Serve with optional toppings like sour cream, avocado, or cilantro.

Notes

For a vegetarian version, substitute the ground beef with an extra can of black beans or 2 cups of diced mushrooms. Top with your favorite garnishes like sour cream, avocado, or cilantro for added flavor.
