Lemon Garlic Chicken with Vegetables

Ingredients
  

  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon (juice and zest)
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow squash, sliced
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken pieces with salt, pepper, and oregano, then add to the hot skillet. Cook for 3-4 minutes until starting to brown.
  • Add garlic and cook for 30 seconds until fragrant.
  • Add broccoli, bell pepper, and squash to the skillet. Cook for 3-4 minutes until vegetables begin to soften.
  • Pour in lemon juice and sprinkle with lemon zest. Add red pepper flakes if using.
  • Cook for another 2-3 minutes until chicken is cooked through and vegetables are tender-crisp.
  • Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, marinate the chicken in lemon juice and garlic for 15 minutes before cooking. Swap in your favorite seasonal vegetables or serve over rice or quinoa for a heartier meal.
