Ingredients
  

  • 1 pound boneless, skinless chicken breast, cut into thin strips
  • 2 tablespoons vegetable oil
  • 2 cups mixed vegetables (broccoli florets, sliced bell peppers, carrots, snow peas)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds
  • 2 green onions, sliced
  • Cooked rice for serving (optional)

Instructions
 

  • In a small bowl, whisk together soy sauce, honey, rice vinegar, and cornstarch mixture to make the teriyaki sauce.
  • Heat vegetable oil in a large skillet or wok over high heat.
  • Add chicken strips and cook for 3-4 minutes until nearly cooked through.
  • Add garlic and ginger, stir for 30 seconds until fragrant.
  • Add mixed vegetables and stir-fry for 2-3 minutes until crisp-tender.
  • Pour teriyaki sauce over the chicken and vegetables. Cook for 1-2 minutes until sauce thickens and coats everything evenly.
  • Remove from heat and drizzle with sesame oil.
  • Garnish with sesame seeds and green onions.
  • Serve over rice if desired.

Notes

Use your favorite mix of vegetables, such as broccoli, bell peppers, or snow peas. Serve over steamed rice or noodles for a takeout-style meal at home. For extra flavor, add a pinch of chili flakes or a splash of pineapple juice to the sauce.
