Mediterranean Breakfast Tacos

Mediterranean-inspired breakfast tacos with eggs, fresh vegetables, feta, olives, and herbs. Rich in healthy fats and antioxidants.

Ingredients
  

  • 4 whole wheat tortillas
  • 4 large eggs, beaten
  • ½ cup cherry tomatoes, halved
  • ¼ cup cucumber, diced
  • 2 tbsp red onion, finely diced
  • ¼ cup feta cheese, crumbled
  • 8 kalamata olives, pitted and sliced
  • 1 tbsp olive oil
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 small garlic clove, minced
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat. Add garlic and sauté for 30 seconds.
  • Pour in beaten eggs, season with salt and pepper, and cook, stirring gently, until just set but still slightly moist.
  • Warm tortillas in a dry skillet or microwave for 20 seconds.
  • Fill tortillas with scrambled eggs, then top with cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  • Sprinkle with fresh dill and parsley, and serve with lemon wedges for squeezing over the top.
