Ingredients

medium sweet potatoes, diced into small cubes
1
red bell pepper, diced
1
yellow onion, finely chopped
2
cups fresh spinach
4
eggs
2
tablespoons olive oil
1
teaspoon paprika
½
teaspoon garlic powder
Salt and pepper to taste
Fresh chives for garnish
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced sweet potatoes and cook for 5-7 minutes until they begin to soften.
Add bell pepper and onion, cooking for another 5 minutes until vegetables are tender.
Season with paprika, garlic powder, salt, and pepper.
Create four wells in the vegetable mixture and crack an egg into each.
Cover and cook for 3-4 minutes until eggs reach desired doneness.
Add spinach during the last minute of cooking, allowing it to wilt.
Garnish with fresh chives and serve immediately.
Notes
Customize with any vegetables you have on hand. Prep the veggies the night before for faster mornings.
