Sweet Potato Breakfast Hash Bowls

Ingredients
  

  • 2 medium sweet potatoes, diced into small cubes
  • 1 red bell pepper, diced
  • 1 yellow onion, finely chopped
  • 2 cups fresh spinach
  • 4 eggs
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add diced sweet potatoes and cook for 5-7 minutes until they begin to soften.
  • Add bell pepper and onion, cooking for another 5 minutes until vegetables are tender.
  • Season with paprika, garlic powder, salt, and pepper.
  • Create four wells in the vegetable mixture and crack an egg into each.
  • Cover and cook for 3-4 minutes until eggs reach desired doneness.
  • Add spinach during the last minute of cooking, allowing it to wilt.
  • Garnish with fresh chives and serve immediately.

Notes

Customize with any vegetables you have on hand. Prep the veggies the night before for faster mornings.
