Ingredients

  • 1 cup almond flou
  • 2 large eggs
  • 2 tbsp heavy cream
  • 1 tsp baking powder
  • A pinch of salt

Instructions

  • Combine all the ingredients in a mixing bowl until the batter is smooth.
  • Heat a non-stick skillet over medium heat.
  • Pour small portions of the batter onto the skillet and cook for 2-3 minutes on each side until golden brown.

Notes

  • Make sure to use finely ground almond flour for the best texture.
  • Let the batter rest for a few minutes to help the pancakes hold together better.
  • Cook the pancakes on low to medium heat to prevent burning, as almond flour browns quickly.
  • If the batter is too thick, add a splash of cream or milk to loosen it.
  • These pancakes are naturally gluten-free and low in carbs.
  • Serve with your favorite toppings, such as berries, a drizzle of honey, or a dollop of yogurt.
  • Store leftovers in an airtight container in the fridge for up to 2 days; reheat gently in a skillet.
