½cup cooked and crumbled turkey bacon (or regular bacon)
½cup chopped green onions
½cup Greek yogurt or sour cream (for topping)
Instructions
Preheat oven to 400°F (200°C).
Scrub and wash the sweet potatoes, then slice them in half lengthwise.
Place the sweet potato halves on a baking sheet, cut side down. Brush with olive oil and bake for 25–30 minutes until tender.
Let the potatoes cool slightly, then scoop out most of the flesh, leaving a thin layer inside the skin.
Brush the inside of the skins with olive oil, and sprinkle with salt, pepper, garlic powder, and smoked paprika. Bake for another 10 minutes until crispy.
Sprinkle cheese and crumbled bacon over the skins. Bake for another 5 minutes until the cheese is melted.
Top with chopped green onions and a dollop of Greek yogurt or sour cream. Serve warm
