Crispy Loaded Sweet Potato Skins Easy and Healthy

Ingredients
  

  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ cup shredded cheddar cheese
  • ½ cup cooked and crumbled turkey bacon (or regular bacon)
  • ½ cup chopped green onions
  • ½ cup Greek yogurt or sour cream (for topping)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Scrub and wash the sweet potatoes, then slice them in half lengthwise.
  • Place the sweet potato halves on a baking sheet, cut side down. Brush with olive oil and bake for 25–30 minutes until tender.
  • Let the potatoes cool slightly, then scoop out most of the flesh, leaving a thin layer inside the skin.
  • Brush the inside of the skins with olive oil, and sprinkle with salt, pepper, garlic powder, and smoked paprika. Bake for another 10 minutes until crispy.
  • Sprinkle cheese and crumbled bacon over the skins. Bake for another 5 minutes until the cheese is melted.
  • Top with chopped green onions and a dollop of Greek yogurt or sour cream. Serve warm
