Ingredients
4
small whole wheat tortillas

egg whites (or 3/4 cup liquid egg whites)
2
cups fresh spinach, roughly chopped
¼
cup cherry tomatoes, halved
2
tbsp feta cheese, crumbled
1
tbsp olive oil
1
small garlic clove, minced
¼
tsp dried oregano
Salt and pepper to taste
Hot sauce (optional)
Instructions
Heat olive oil in a non-stick skillet over medium heat. Add garlic and sauté for 30 seconds.
Add spinach and cook until wilted, about 1-2 minutes.
Pour in egg whites, season with salt, pepper, and oregano. Cook, gently stirring, until just set but still moist.
Warm tortillas in a dry skillet or microwave for 20 seconds.
Fill tortillas with egg white mixture, top with cherry tomatoes and feta cheese.
Serve immediately with hot sauce if desired.
Notes
About 220 calories and 18g protein per serving (2 tacos). Ideal for busy mornings.
