500g(about 1 lb) fresh tortellini (cheese or meat, as preferred)
1tablespoon olive oil
2cloves garlic, minced
400g (14 oz) fresh tomatoes (diced) or 1 can crushed tomatoes
200ml(about 3/4 cup plus 1 tbsp) heavy cream
1teaspoon Italian seasoning (basil, oregano, thyme)
Salt and pepper to taste
A few fresh basil leaves (optional)
Grated Parmesan cheese for serving (optional)
Instructions
In a large skillet or saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
Add the tomatoes (fresh or canned) and Italian seasoning. Season with salt and pepper. Let simmer for 5 minutes so the sauce thickens slightly.
Stir in the heavy cream and mix until the sauce is smooth and creamy. Let cook for another 2 minutes over low heat.
Add the fresh tortellini to the sauce. Stir gently to coat them well. Cover and cook for 5–7 minutes, until the tortellini are tender and heated through (adjust the time according to package instructions).
Taste and adjust seasoning if needed. Serve immediately, garnished with fresh basil and grated Parmesan cheese if desired.
Notes
For an even richer dish, add some halved cherry tomatoes or fresh spinach to the sauce. This recipe can be easily adapted to your taste by varying the type of tortellini or herbs you use.
