Tropical Dragon Fruit Chia Bowl

A colorful and healthy breakfast bowl made with chia seeds, coconut milk, and dragon fruit, topped with fresh fruit and seeds. Quick to prepare and full of tropical flavor!

- ¼ cup chia seeds
- 1 cup coconut milk (canned or carton)
- 1 tbsp maple syrup or honey
- 1 packet frozen dragon fruit puree or ½ fresh dragon fruit, pureed
- ½ cup fresh dragon fruit, pureed
- 1 kiwi, sliced
- 2 tbsp toasted coconut flakes
- 1 tbsp hemp seeds
- Fresh mint leaves
- (Optional) 1 tbsp goji berries
In a bowl, whisk chia seeds and coconut milk. Let sit 5 min, whisk again to avoid clumps.
Cover and refrigerate for 30 min.
Add dragon fruit puree, maple syrup, and vanilla. Mix until pink and well combined.
Cover and refrigerate overnight (at least 6 hours).
In the morning, prepare toppings: cut fruit and toast coconut flakes if needed.
Spoon pudding into a bowl, arrange mango, kiwi, coconut, hemp seeds, goji berries, and mint on top.
